Tired of your regular boiled or fried yams, try out these delicious recipe:
Yamarita
Yamarita also known as Dundun Oniyeri is a flour coated boiled yam. This meal is a very fantastic and tasty one.
Yamaritas are best enjoyed with tomato sauce or fried stew.
Recipe:
1/2 tuber of yam
1 egg
1 cup of plain flour
1/2 teaspoon curry powder
Bouillion cubes
I teaspoon of seasoning
I teaspoon of cayenne (ata gungun)
Cooking oil( it should be enough for deep frying )
Salt to taste
Preparations:
I) Wash yam and place in a small pot; put in adequate water and a little bit of salt. Cover and leave to boil on medium heat for at least 10 minutes.
DO NOT OVER BOIL.
II) Drain out the water from the cooked yam and leave it to cool.
III) In a plate or tray, mix the flour, bouillion cubes, seasonings and curry powder and set aside
IV) In a separate plate , break the eggs and add a little bit of salt
V) Dip each yam into the egg mixture and coat the yam with the flour mixture.
Ensure it's well coated.
VI) Dip the yam into the egg mixture as the first egg coating is for extra crunchiness.
VII) Heat the pan and pour in cooking oil( coconut oil or groundnut oil), on a low - medium heat after the oil has heated up, put the yam into the oil and fry until yam is slightly brown.
Your yamaritas are ready. Enjoy with your tomato sauce , fried stew or ketch ups.
