Step by step instructions to Make Egusi Soup

 Egusi Soup is a soup thickened with ground melon seeds and contains leafy and different vegetables. Egusi soup is a well-known delicacy among Nigerian culture, it is usually eaten alongside pounded Yam or eba.

 

 Recipe for Egusi soup

·         Use 1 cup blended onions (around 3-5 add chilies to taste)

·         Use 4 cups egusi (melon seeds, ground or Milled)

·        Use 1⁄2 – 1 cup palm oil

·         Add 2 teaspoons of locust beans (Iru)

·         Add Salt

·        Ground crayfish

·         Add stockfish

·         Put Cooked Meat and fish

·         2 cups cut pumpkin leaves

·         Add your sliced waterleaf

 

Now let get started.

·        Blend egusi seeds and onion mixture to form a paste. Put aside

·        In a huge pot, heat the palm oil for a minute and afterward add the locust beans.

·        Slowly add the egusi paste and set it on low heat to boil it.

·        Scoop teaspoon size balls of the egusi paste mixture into the stock. Be sure to keep ball shape.

·        Leave to simmer for 20 – 30 minutes so the balls cook through.

·        Add the meat and fish and other bits which you’d like to use.

·        Add cut-up pumpkin leaves.

·        Add the waterleaf.

·        Stir and put a lid on the pot and allow cook for 7–10 minutes, till the leaves wilt.

·        Add the bitter leaf. Leave the lid off while the cooking finishes for another 5-10 minutes.

·         Stir, check to season and adjust accordingly. That is all it takes to prepare your super delicacy...
