How to prepare Couscous Stir-fry and it Health Benefits

But before we talk about the recipe, let's briefly talk about couscous itself.ย 

Couscous is a processed grain product made from little balls of durum wheat or semolina flour. It is a kind of pasta and not rice at all. It is versatile and can be enjoyed in different forms such as in salads, soups or stir-fries. It has the following benefits ;

1. Couscous is an exceptional source of selenium - which is a powerful antioxidant that helps your body repair damaged cells and decreases inflammation. Selenium is also essential for proper thyroid gland function, protecting it against damage and contributing to hormone production.

2. Consuming selenium through foods such as couscous might also help decrease your risk of certain cancers.

3. Selenium also plays a role in the regeneration of vitamins C and E, which help increase/boost your immune systemโ€™s function.

4. Also, couscous is a good source of plant-based protein, providing 6 grams per one-cup serving which is slightly higher than that of rice. Diets high in plant-based protein have been linked to a lower risk of stroke, cancer and death from heart disease.ย 

However, unlike rice, couscous (just like other wheat products) contain gluten and as such not suitable for people with gluten allergy/intolerance (i.e celiac diseases found in about 1% of the population). Also, couscous, just like rice is fairly high in carbs and should be consumed in moderation for those with blood sugar issues or diabetes.ย 


Ingredients ; 1 cup of couscous, hot chicken/meat stock, oil, veggies (e.g diced carrot, green beans, red pepper, onions, sweet corn etc), salt, herbs and spices of choice.

Procedure ; Pour the hot stock on the couscous, cover and allow to swell/steam for 5-10 minutes. Then stir-fry your veggies in little oil (just like you would do when preparing fried rice). Use fork to fluff the already steamed couscous and then add it to the veggies and stir well together. Serve with any protein of choice and enjoy.ย ย

- If you don't have meat/chicken stock, just use hot water with little salt to soak the couscous.ย 

- Let the liquid be just a little bit above the couscous level and not swim in the liquid.

- Do not boil the couscous on fire, just soak or else it will become soggy and not fluffy.ย 

- If you're in Nigeria, hopefully you could get couscous in big stores/supermarkets and if you're abroad, it is available in all food stores.ย ย
