Hello sweethearts. Today I bring to you a tasty recipe which you really need to try if you haven't.
Aside the regular potato porridge, boiled and fried potatoes and all that this is a recipe that you are gonna enjoy a lot.
A little something about Sweet Potatoes;
Sweet potatoes are very nutritious and are loaded with many vitamins. Some of which are Vitamin C, Vitamin B6, beta carotene etc.
Sweet potatoes are one of the most nutritious foods in the world.
Anywhere you see a good recipe of sweet potatoes do well to try it. I will be posting some though.
Sweet potatoes are rich in Vitamin B6 which is very good for heart health. It helps maintain the flexibility of the arteries which aids easily circulation of blood.
Sweet potatoes contains potassium which plays an important role in lowering blood pressure. It also aids the normal function of the brain and the central nervous system.
The benefits of sweet potatoes are a lot.
Here comes the recipe;
2-3 big sized sweet potatoes
1 big onion, peeled and diced
1 red ball pepper, seeded and chopped
2 cloves of garlic, peeled and minced
2 teaspoons of pounded black pepper (uziza)
1/4 cup of vegetable or olive oil
MODE OF PREPARATION
Peel the sweet potatoes and rinse. Cut them into small cubes. Boil for five minutes, do not overcook.
Drain and close in a pot to retain heat.
Get a frying pan or a skillet and put your oil. Allow to heat. Pour your onions and stir till it starts to turn golden.
Add the pepper, potatoes and garlic stir and allow to cook for 7-10 minutes till the edge of the potatoes start to turn golden brown.
Add salt and the freshly group black pepper to your satisfaction.
Your potato is now ready for serving. Garnish with sliced parsley leaves. In the absence of parsley you could use neatly sliced spinach as garnish.
Eat the yummy meal alongside room temperature juice or a glass of hot milk or even water. You can't come and kill yourself. Lol
