We are talking about heavy delicious foods, especially native ones,Here I'm going to give you tips and hints on how to prepare a very special Soup ,but the question now is, can you prepare this delicious soup with your two months salary? Like if it costs you your two months salary can you and will you do it?
Well,as for me I might make the sacrifice, because good things don't last forever,so enjoy things while you can,for as they say life is too short,even if it takes my two months salary,I will enjoy it and prepare it so nicely.
Without wasting much of our time,let's quickly look at how to prepare this special Soup and some tips in making good nice soups for all occasions,be it for visiting or for the home.
In IGBO land we have some special Soups for occasions or just for the family,like every other tribe there exists major foods which everyone enjoys,so let's look at the famous "Ofe Ukazi" the Ukazi Soup.
"Ukazi" is a leave mainly gotten from the bush,but is now domesticated,in the sense that it is grown at home,UKAZI SOUP is a very nice soup enjoyed by IGBO tribe,now let's take a quick look at how to prepare this delicious soup.
First of all,chop or slice your leaves,wash them very well with water,to avoid sand and unpleasant tastes and experiences when eating it,you can choose to include snails, because honestly they make a perfect mix,place your pot on fire,add a desirable quantity of water, simmer your meat and put stockfish because it is very necessary and essential for soups.
To start cooking the UKAZI soup, add the water to the meat and bring to boil. Add the Crayfish, Ogiri, the remaining pepper and palm oil and cook for about 10 minutes to reduce the flavor intensity of the Ogiri
Stir, check to correct the seasoning, reduce the heat so the soup is just simmering. Sprinkle on the Ofo in the pot and stir rapidly to mix it in the soup and then raise the heat slightly so the soup starts to thicken. Make sure to add melon rolls or melon seed buns which is also called "eguisi"
When soup thickens enough which will take just about 2 minutes, add the Okaakpurnd Uziza leaves and cook for about 3 minutes. Your soup is ready to be served for the family,and that's it for this special soup,let's have a brief look at melon soup called indigenously as "ofe eguisi"
This soup Is better off fried,it is fried with palm oil , onions and grinded melon seed,Soak the thinly sliced leaves in hot water for 5 minutes. Rinse to remove all traces of dirt…Transfer your Egusi into a frying pan and place on medium heat. Toast for 3-5 minutes, boil your meats with enough onions and seasoning,add stockfish
Place a pot on medium heat, add the palm oil, when it’s hot, chop half of an onion and add into it. Stir the onions till fragrant,then add the locust beans, stir for 2 minutes, then add half of the crayfish, continue to stir for a minute
Now add 1 cup of stock or water and continue to cook, be careful not to add too much stock or water. Let this fry for a further 5 minutes, then add the blended Egusi, then add the boiled meats and smoked fish…add all your ingredients, including sea meats,add bitter leaf,the one you have washed and make sure to get rid of the bitter taste first.
