How To Make Gingerbread Cake At Home

The cake is so delicious, light and mildly spiced. You can enjoy it with some whipped cream or a dusting of icing sugar.

Ingredients

All Purpose Flour – 150 grams

Baking Powder – 1.5 tsp

Baking Soda – 1/2 tsp

Brown Sugar – 1/2 cup or 100 grams packed

Cinnamon Powder – 3/4 tsp

Eggs – 1 large

Ginger Powder – 1/2 tsp

Ground Cloves – a pinch

Honey – 1/2 cup / 120 ml

Oil – 1/2 cup / 120 ml

Salt – 1/4 tsp

Water – 180 ml

Directions

Preheat your oven to 350 degrees F (180 degrees C) and place the rack in center of oven. 

Butter and flour a 20cm or 8 inch square pan with 2 inch (5 cm) sides and set aside.

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, ginger, cloves, lemon zest, and grated ginger (if using).

Beat the butter and brown sugar until light and fluffy (about 2-3 minutes) with an electric mixer or hand mixer, adding the eggs, one at a time and beating well after each addition. 

Add the honey and beat to combine. Scrape down the sides of the bowl as needed.

Now In another bowl, add flour, baking powder, salt, cinnamon, cloves, ginger and mix well. Set aside.

Add the dry ingredients and wet ingredients as half and half and fold in gently.

Add the remaining ingredients and fold until it gets incorporated.

Pour the batter in the cake pan and bake for 40 to 45 mins till a tooth pick inserted comes out clean.

Remove from the oven and cool.

After about 10mins flip it over onto a rack to cool completely

This yummy cake can be stay for several days at room temperature but it is advisable to store in the fridge because of our humid climate.
