How to Prepare the Delicious and Tasty Naija Jollof.

Nigerian Jollof is popularly known as Naija Jollof, it is a type of cooked rice that is rich and has an incredible taste. Naija Jollof is regarded as one of the best Jollof rich eaten in Western African. 

If you happen to live in Nigeria, you will notice a slang most people use in referring well cooked jollof rice. This slang is 'Party Jollof Rice'.

Najia Jollof has a very nice aroma which is very distinct and so yummy. You can perceive the aroma cooking from miles away.

Today, I will be teaching you easy steps in cooking the popular Naija jollof.

Ingredients needed are as follows:

3.5 cups (750g) long grain parboiled rice

2-3 cups of tomato stew

Chicken

Pepper and salt

2 medium Onions 

3 knorr cubes

2 teaspoons of thyme

2 teaspoons of curry powder

Steps to take before cooking the Jollof rice

#1. Prepare the tomato stew. It is better to prepare the tomato stew before hand and keep in the freezer. This makes it easy for you when you want to cook any related dish. All you have to do is just to add it to your cooking.

#2. If you're using whole chicken, then wash and cut it into pieces, cook with the thyme, knorr cubes and 2 bulbs of onions (chopped). You may also fry it. This will give it a golden look which is presentable when you have guest.

#3. Parboil the rice if you haven't, rinse the parboiled rice and put in a sieve to drain.

The main Cooking Directions 

  1. Pour the chicken stock and the tomato stew into a sizeable pot and leave to boil.
  2. Add the drained parboiled rice, curry powder, salt and pepper to taste. Remember that the water level should be the same level of the rice. This will enable the water to dry up when e rice is cooked.
  3. Cover the pot and leave to cook on low or medium heat. This will not allow the rice to burn before the water dries up. Always taste the meal to know when it is fully cooked. 

When the food is done, you can serve with fried plantain, moi-moi, fried fish. You can even add salad to garnish it.
