Instructions:


If using fresh tomatoes, score an X at the bottom of each tomatoes, and blanch them in boiling water for about 1 minute, then transfer them to an ice bath. Peel the tomatoes and chop them into small pieces. If using canned tomatoes, skip this step.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent.

Add the chopped tomatoes to the pot and stir to combine with the onion and garlic.

Add the salt, sugar, basil, oregano, and black pepper. Stir to combine.
