How To Prepare Delicious Ekpang Nkukwo

If you've visited the south south region in Nigeria, especially Akwa Ibom state and cross Rivers state and you've not tasted ekpang Nkukwo, then you've really missed out on this delicious delicacy.

Ekpang Nkukwo is one of the Nigerian recipe prepared with water yam. This food is so special that it is sometimes reserved for special occasions like traditional marriage and anniversary.

The main ingredients needed for this preparation is shelled Periwinkle called "Mfi" by the region and water yam. Some people use cocoyam to prepare this.

Other ingredients include;

A good amount of tender cocoyam leaves ( you can substitute for pumpkin leaf), water yam, a generous quantity of Palmoil, crayfish, onions, fresh pepper, salt, bouillon cubes to taste, dried fish and beef. Steam the fish and beef very well.


Peel the water yam, wash it and grate. Next, rinse the pot and add a generous amount of palm oil on the insides of the pot.

Also rinse the tender cocoyam leaves and tear into small pieces, If you're using pumpkin leaves, wash these too.

Blend the fresh pepper and crayfish, then cut and wash the shelled periwinkles.

Step1: place the periwinkles at the base of the already well-oiled pot.

Step2: Scoop a small quantity of the already grated water yam into a piece of the torn cocoyam leaf or on one pumpkin leaf. Then Wrap and place it one after the other inside the pot till everything is exhausted.

Step 3: now add the grounded pepper and crayfish, onions, the steamed stock.

Step 4: Add some hot water to the level of the contents in the pot and allow to cook for like 20 minutes. 

Step 5: add enough palm oil, and salt. You can choose to add scent leaf to taste (optional).

Allow this to cook for more five minutes, and your delicious Ekpang Nkukwo is ready.

Allow for extra 5 minutes before you stir.

Kindly note that, some cocoyam leave scratch the throat, so you have to be careful when plucking your tender cocoyam leave.
