Edikaikong Soup, also known as vegetable soup, is one of the most popular Nigerian Soup native to the Efiks and Ibibios of Cross River State and Akwa Ibom State respectively.
The Soup is mostly prepared in important occasions like Marriage ceremony and Cultural celebrations. It is usually preferred to other Soups because of it's high nutritional value.
Here are the ingredients for preparing a standard Edikaikong Soup. It can be reduced or increased depending on the number of people it is meant for.
Ingredients:
Serving 6*3
Half cup of Onions
Stockfish head, according to need
500g dried Fish or roasted Fish
1 cup of ground Crayfish
Waterleaf (2 huge bunch)
Fluted Pumpkin (Ugwu leaf) (1 huge bunch)
Palm Oil(500ml)
Meat of choice
Salt and Pepper to taste
Maggi or Knorr cube (3 - 4)
1 cup of Periwinkle
2 spoons of Ofor or Achi
Preparation:
Step 1
Ensure that all the required ingredients are available.
Wash both the Waterleaf and the Fluted Pumpkin leaf properly to remove sand and dirt.
Slice them separately into bits and put them into separately into clean bowls.
Step 2
Wash the meat, fish and stockfish properly to remove sand and dirt.
Steam them with necessary ingredients; little water, pepper, 2 cubes of Maggi, half cup of Onions, little Salt and other spices of your choice.
Cook for 10-15 minutes till the contents soften enough for consumption.
Turn the contents in a large bowl that can contain it.
Step 3
Place the pot to be used on fire, add 500ml of palm Oil and allow to expand.
Add your properly washed and sliced Waterleaf and allow to boil for 5 minutes so as to bring out the water.
Step 4
Add all your ingredients, except salt and the Fluted Pumpkin leaf and leave to boil for 10 minutes, so that the periwinkle will be properly cooked.
Add your steamed meat, fish and stock fish.
Step 5
Finally, add the fluted Pumpkin leaf and salt to taste and allow to boil for 15 more minutes to ensure it is properly cooked.
Your Edikaikong Soup is ready to be served. It can be either eaten with Garri, Fo-fo, Wheat, Semovita or any other depending on your choice.
Note:
The salt was added last to avoid over salting the Soup.
