[A] PREPARATION OF AFANG SOUP....

[1]. Using a very small quantity of water, boil beef and kanda with diced onions and stock cubes. When done, add the dry fish and cook for about 5 more minutes.[2]. Now add in palm oil, crayfish and pepper. Once it starts to boil, add the okazi leaves, water leaves and periwinkle.[3[. When the periwinkle is done, add salt to taste and there's your Afang soup.[4]. Serve with Garri (eba), semolina, amala or pounded yam.

[B] FACTS ABOUT AFANG SOUP 

The Afang leaf also kown as Okazi leaf is called Wild Spinach. The Afang leaf has its botanical name to be Gnetum africanum. This leaf is a very good source of some amino acids such as leucine, glutamic acid, and aspartic acid, with glutamic acid being important and instrumental for proper and efficient brain functioning. It also contains unsaturated fatty acid as well as many vitamins and minerals. So, we see that Afang leaf has several health benefits,Afang Soup is a vegetable soup that has its origin from the Efik people of Cross River State and the Ibibio People of Akwa Ibom State, all in Nigeria. The Afang Soup is one of the most popular dish in Nigeria, it is especially popular among the Anang and the Ibibio people of Akwa Ibom State. The soup is very nutritious and its cost of preparation is moderate and can be adaptable based on the needs.It is usually served at homes as well as ceremonies such as burials, birthdays, get-togethers, weddings, etc mostly in the southern part of Nigeria. The soup preparation is usually very easy when one knows how to go about it.Above is a display of Afang soup which I consumed as my lunch and it was very yummy. The soup can be eaten with either garri, semovita, wheat, fufu, etc. The choice depends on the consumer.

[C] HEALTH BENEFITS OF AFANG LEAF; The Afang leaf when used properly has various benefits to the health. They include:[1[ Afang leaf has a good amount of iodine which is necessary for the proper functioning of the thyroid gland and this iodine helps to prevent goitre.[2[ It improves weight losing: For all who feel they have excessive weight, add eating Afang to your daily workout sessions as it would foster the whole process.'[3[ Rate of metabolism in the body system is being increased due to the consumption of Afang.
